Carlos Ramirez-Roldan is the Founder and creative mind behind Mr.Papa. His passion for cooking and food began when he was a child. Carlos woke at 5am and spent his weekends going to the local markets with his uncle. Together they would speak to local food vendors, hear the stories behind the food and search for the best produce for his grandparent’s catering business in Lima, Peru. Since he was 6 years old, his dream was to cook.

Carlos loved the noise, the smell and of course, the opportunity to taste everything in the kitchen. At the age of 13 he was in charge of going to the market by himself and would then cook lunch for the staff at his grandparent’s business.

His desire to cook delicious food that makes people smile has only grown stronger over the years and Carlos has worked in the food & hospitality industry for as long as he can remember.

Carlos spent years working in the hospitality industry in Lima before he headed to the United States to complete a Hotel Management Internship at Hilton Hotels. He then returned to Lima where he met Lima-born Chef, Mitsuharu Tsumura. The pair worked together to open Maido, a Nikkei-style restaurant that’s ranked 13th in San Pellegrino’s World’s 50th Best Restaurants. Carlos spent two years working as a Maitre d’ and Restaurant Manager at Maido.

He then packed up and headed down under in 2010 and spent three years working in the food and beverage management department at Rydges Hotels and Resorts.

Carlos worked hard, learnt as much as he could about food and eventually his dreams came true and Mr. Papa was born. Mr. Papa was created with love and is a celebration of Peruvian food, culture and a tribute to what Carlos learnt from his family.
